1½ ounces Tequila reposado
½ ounce Mezcal
1 barspoon agave syrup (1:1 agave nectar to water)
2 dashes Angostura bitters
1 piece orange zest, about the size of a silver dollar
Combine the ingredients, except the orange zest, in a chilled rocks glass with one large ice cube. Stir until chilled, about 30 seconds. Hold the orange zest, skin-side down, several inches above the drink. Light a match and use it to warm the skin side of the peel. Quickly squeeze the zest in the direction of the match. The oil from the zest will briefly burst into flame, showering its essence over the drink’s surface.
